Haris spent six years working the Michaniona auction, he knows which boats to trust and which catch is worth buying. That knowledge is still how every delivery gets made. Mediterranean species arrive twice a week from Michaniona, while trusted local suppliers keep the counter stocked the rest of the week, so there's always fresh fish.
