
Sea Bream Baked with Vegetables
Tsipoura is the fish of Greek plaki. Ours arrives from Michaniona twice a week, pulled fresh from the Aegean. Over a layer of tomato, onion and potato, with white wine and olive oil, it bakes slowly and takes on the flavour of everything around it.

- 2 pcTomatoes
- 1 pcOnion
- 3 pcGarlic cloves
- 4 tbsp
- 1 pcLemon
- 100 ml
- 1 tspOregano
- to taste
- 1 bunchParsley, for garnish

Preheat oven to 180°C.

Slice potatoes into thin rounds and the onion into half-rings. Arrange in the baking dish, drizzle with half the olive oil and season with salt and pepper.

Slice the tomatoes and half the lemon into rounds. Arrange over the potato layer.

Place the sea breams on top of the vegetables. Fill each cavity with a few lemon rounds and garlic cloves.

Sprinkle the fish with oregano, salt and pepper. Pour over the remaining olive oil and the white wine.

Bake for 45-50 minutes, until the fish is cooked through and the potatoes are tender.

Serve straight from the dish, scattered with fresh parsley.
